Pasta with "Italian Sausage"

Ingredients
4 oz. whole wheat pasta of your choice (I like Penne)1 c. jarred marinara of your choice (keep it simple, though)2 tsp. olive oil1 link of Tofurky Italian Sausage1/3 c. chopped onion1/3 c. chopped green bell pepper
Directions
Makes 2 servings (can very easily be increased to feed more people)

Cook pasta according to package directions.

While pasta is cooking, add olive oil to large skillet and heat over medium to medium-high heat. Slice "sausage" link into 1/2 inch discs or ovals. Chop onion and green pepper to desired size.

When pan is warm, add sausage and vegetables. Cook until "sausage" is browned and onions are translucent. Then add marinara sauce. Simmer until heated through (basically, until your pasta is done).

Strain pasta, top with sauce. Voila!

Even though the pasta sauce is already seasoned, I like to add my own herbs, like basil and oregano, and some garlic powder. Also, this is even more delicious (and nutritious) if you sprinkle on a little nutritional yeast or vegan parmesan. Try Parma! which is a great, raw topping.
