Yummy breakfast muffins

Ingredients
*Whole Wheat Flour, 1 cup *Flour, white, 1 cup Baking Soda, 3 tsp Salt .25 tsp Milk, 2%, 1 cup Egg, fresh, 1 large*Laughing Cow Light Creamy Swiss Original Cheese (Serving = 1 wedge), 3 serving Fresh Chives, 3 tbsp chopped *Hormel Bacon Bits, 5 tbsp *Sargento Fancy 4 Cheese Mexican, 1 cup *Shortening, Crisco, 2 tbsp
Directions
Mix dry ingredients in one bowl. In another, beat egg, add milk, add beat again. Add Laughing Cow cheese, and mash and mix futher (it's okay to have a few little lumps of cheese. Mix wet mix into dry mix--don't stir too much yet!! Add in chopped chives, the real bacon, and about a quarter cup of the mexican blend. you may have to add in a little more milk at this point if it is too thick.
Dollop about 2/3 of the way up into muffin tins. Top equally with remaining mexican cheese. Bake in 350 degree oven for about 15-20 minutes, or until toothpick comes out clean. Makes 18 servings.

    very dry, and not very tasty, add more liquid for sure next time if I ever make these again. I think I will add the shredded cheese to the mix next time also. - 2/5/10
