Whole Wheat and Flax Pancakes

Ingredients
1 C. whole wheat flour1/4 C Ground Flax Seed1/2 tsp Salt1 Beaten Egg1 C. Non Fat Milk 1 TBS White Vinegar2 TBS Unsweetened Applesauce
Directions
Combine dry ingredients and mix together with a whisk. Put one Tablespoon White Vinegar in bottom of measuring cup and fill remainder of cup with Non Fat Milk. (You can substitute 1C of Buttermilk for this step) Let this sit while you combine the rest of the wet ingredients with the dry. Finally add the milk mixture and cook your pancakes on a moderately hot grill sprayed with cooking spray.
Makes 8 - 5" Pancakes (scant 1/3 C batter per pancake)
