3tsp olive oil2 cloves garlic1 cup diced onion1 green pepper (capsicum) diced500gm lean minced beef1 x 410gm can chopped tomatoes1/4 cup tomato paste1 x 410gm can red kidney beans1/2 tsp ground oregano1 tsp each ground cumin and paprikachilli powder to tastesalt & pepper to taste
Makes 6 servings
Heat oil in a deep pan and saute garlic and onion for 1 minute.
Add capsicum and meat and cook until mince is browned all over.
Add tomatoes, tomato paste, kidney beans, and spices. Season, cover and simmer for 35 to 40 mins stirring occasionally.
