1 slices thick cut bacon, diced3 slices fresh mushrooms, diced2 Tbs chopped onions1 Tbs chopped green pepper3 XL eggs2 chopped cherry tomatos1/2 Tbs chopped parsley1/4 tsp dried oregano1/8 tsp dried basildash of ground bay leaf2 Tbs Sargento Italian garlic cheesepepper and salt to taste
Fry chopped bacon on Med-low heat until about half done. Add onions, mushrooms, green pepper, oregano, basil, and bay leaf. saute until tender. Scatter the chopped tomato over the top, then add the eggs and cover. Pepper and salt to taste. Cook until the eggs are to your liking. Add cheese let melt and serve. Great with italian bread toasted.
