Cheesy Quinoa Casserole

Ingredients
1 med. onion; diced1 lrg red pepper; diced1 lrg clove of garlic; minced1 tsp olive oil1 sweet potato; peeled & diced3/4 c. Quinoa (raw)2 eggs3/4 c. skim milk3/4 c. soy shredded cheesesalt/pepper
Directions
Heat oven 350 & spray either lrg pie plate or 1.5 qt casserole dish. Heat quinoa and 1.5 c water over med/high heat until boiling. Reduce heat and cover, simmer 15 to 20 min, or until quinoa is cooked and water is evaporated. Meanwhile, combine sweet potato (diced in small pieces) and 1/4 c. water in microwave safe dish; heat sweet potato for minutes in microwave. Saute red pepper, onion in oil for 5 min, add garlic. Cook for 5 more minutes. In a large bowl stir eggs and milk together; add quinoa, cooked veggies, sweet potato, and cheese (leave little cheese for top); stir in salt/pepper. Pour into baking dish and bake for 30 minutes; let cool for 5 minutes
