.5 cup Quaker Old Fashioned Oats.5 cup Fat Free Cottage Cheese3 large Egg WhitesSplash of Vanilla Extract (~1 tsp)2 tbsp. Ground Cinnamon (more or less to taste)
Add oats, fat free cottage cheese, egg whites, vanilla and ground cinnamon together in a food processor or blender. Blend ingredients together until smooth. Heat a non-stick pan on medium to medium-high. Pour batter onto non-stick pan and cook each pancake about 2 minutes on each side. Makes 3 medium sized pancakes.

They are considered a good fat but the cholesterol is located in the yolk of an egg and the protein value for an egg white is higher than an egg yolk so this recipe is good for people that are watching their cholesterol and fat intake but still want the protein that is found in eggs.

Pretty tasty. These LOOKED regular pancakes, but the taste and texture reminded us of french toast. Works for me!

I really like these pancakes. I had them for the first time this morning. They were really tasty topped with dark chocolate chips, and syrup. I would have rated 5 stars except they fell apart while cooking. I'm going to try baking them in the oven using my baking stone. I'll update. - 12/22/10
