NON - Egg Salad or Faux Egg Salad with Tofu

Ingredients
1 - 12 oz package of Extra Firm Tofu1 TSP Yellow Mustard2 TBSP of Miracle Whip Light (or Lite Mayo if you prefer)1 TBSP Sweet Relish1 TSP Yellow Mustard2 TSP diced oniondash of celery salt, onion powder, black pepper
Directions
Makes 4 servings (4 sandwiches - approx 1/4 cup salad)

Empty entire contents of Tofu into dish. Chop up with knife & fork. Add 2 TBSP Miracle Whip Light, 1 TBSP Sweet Relish, 1 TSP yellow mustard, 2 TSP diced onion & stir well. Add in your seasonings - I like a little celery salt, onion powder & ground black pepper. Chill for 30 minutes.

Tastes just like egg salad without the extra calories & cholesterol. Enjoy!
