Spanish Rice with Beans 'n' Beef

1 lb. Lean ground beef3 lg. cloves garlic, minced1 lg. onion, chopped1 green pepper, chopped2 lg. stalks celery, chopped1 12 oz. can niblets corn1 28 oz. can diced tomatoes1 19 oz. can red kidney beans1 c. instant rice (dry)1 c. water1 tsp. cumin1 tsp. chili powdersalt & pepper to taste
Brown beef, drain and rinse. Put back in pan. Add all garlic, onion, celery and green pepper. Saute for 5 minutes. Add tomatoes, beans and corn. Simmer for 10 minutes. Add rice and water. Bring back to boil. Turn off burner. Cover and let sit for 10 minutes or until rice has absorbed most of the liquid. You could add more of the spices, but my husband can't handle them so I have to limit them. Makes 6 generous servings (1.5 cup).
