Cranberry Bulgur Muffins

Ingredients
1 egg1 cup milk3 TBS vegetable oil1 1.2 cups whole wheat flour1 TBS sugar4 tsp baking powder1/2 tsp salt3/4 cup cooked bulgur1/2 cup cranberries or raisins(opt) 1 TBS cherry or orange extract
Directions
Beat egg slightly and then stir in milk and vegetable oil. Sift dry ingredients together. stir in bulgur and cranberries (if desired). Add milk mixtures to dry ingredients, stirring just until flour is moistened. (Sometimes I also add 1 TBS of cherry or orange extract). Fill buttered muffin cups 2/3s cup full and bake at 425 degrees F for 15-20 min. Yield: 12 muffins
