Buca Di Beppo's Lentil Soup

Ingredients
3 quarts beef stock1 pound dried lentils, rinsed1 large carrot, finely diced1 yellow onion, finely diced1/2 cup finely diced celery1 pound Italian sausage, cooked and coarsely chopped3 Tablespoons chopped fresh sage1 cup chopped ripe tomatoessalt & pepper to taste
Directions
Bring stock to a boil, then add the lentils, carrots, onions, celery, sausage and sage. Turn heat down to medium and cook for approximately 1 hour or until the soup thickens. Stir in the tomatoes, salt and pepper. Serve the soup in individual bowls, topping with extra-virgin olive oil. (optional)
