Ingredients
1 lb shrimp; thawed, cooked, without tails1/2 bacon, thawed1 C pineapple chunks, drained1 C bbq sauce2 C white rice (optional if using skewers)
Directions
Makes 4 large servings

1. Cook bacon partway either in skillet or in grill basket
2. Once bacon is almost cooked, add shrimp. Cook for several minutes
3. Add pineapple and 1/2 the bbq sauce
4. Cook for several minutes and add remaining bbq sauce
5. Cook for several minutes
6. Serve over rice
