Best Enchiladas

Ingredients
40oz breast tenders, approx. 20 tenders10 carb balance whole wheat tortillas10 tbsp fat free sour cream2.75 oz shredded cheddar cheese1 28 oz can El Pato enchilada sauce2 4 oz can mild diced green chiles3 tbsp chopped cilantro
Directions
Cook chicken and shred it. Mix shredded chicken, sour cream, 1 can green chiles, chopped cilantro and approx. 1/2 shredded cheddar cheese. Spray 9 X 13 pan with cooking spray and coat bottom of pan with approx. 1/2 cup of enchilada sauce. Roll 1/3 cup mixture in a tortilla. Place in pan. When finished rolling, pour rest of enchilada sauce over and put remaining cheese and other can of chiles on top. Bake uncovered for 30 minutes @ 350 degrees.

    Used ground turkey in place of the chicken. There's a bit too much enchilada sauce so I should have made some rice to go with it. I'll do that next time since I'll definitely make this again. Great recipe to feed a crowd. - 6/27/13
