Black Bean and Yam Burritos

Ingredients
1 tbs Extra Virgin Olive Oil1/2 cup chopped Sweet Onion1 tsp chopped Garlic for jar = 2 cloves1- 15 oz can of Black Beans (drained)1/2 cup water1 tbs Chili powder(Optional - not included in nutritional values 1 tsp Cumin & 1/8 tsp Cayenne Pepper)1 tsp Yellow Mustard1 1/2 tbsp Soy sauce (did not use low sodium)1 15 oz can of Bruce's Yams (drained)6 Low carb, whole wheat tortillas, small or taco size3/4 cup Shredded Kraft Mexican four cheese
Directions
**Makes 6 taco size (small) Burritos**

Heat oven to 350 degrees,
Saute onion & garlic in olive oil until soft ,
Stir in drained black beans and water,
Cook over medium heat for 3-4 minutes,
Remove from heat and drain excess water saving about 1/4 to 1/2 cup of liquid,
Keep beans and onions in frying pan,
Stir spices in reserved liquid and add to beans,
Drain canned yams and mash in a small bowl,
Divide yams evenly into 6 tortillas,
Divide black beans evenly into tortillas, sprinkle with shredded cheese,
Fold into burrito shape and secure with a toothpick,
Lay folded burritos in a shallow baking dish in one layer, and
Bake in oven for 10 minutes or until heated through and cheese is melted.
