Ingredients
SalsaEggBrown RiceGround BeefGround TurkeyChicken Broth
Directions
Mix ground beef & turkey. Add egg, 1/2 cup salsa and 1 cup cooked brown rice. Season with salt & pepper. I use my homemade salsa, but any bottled salsa will work. Form into small meatballs (I use a cookie scoop). Bake in 400 degree oven for 30 minutes.
Heat the chicken broth, add 1/2 cup salsa and the meatballs. Simmer for 15 minutes. Just before you serve, add 1 cup of cooked brown rice, 1 cup of water and heat for 5 minutes.
