Coke Zero Chocolate Cake

Ingredients
2 cups flour1.5 cups sugar1 cup light parkay margarine1 cup coke zero3 TBsp cocoa powder2 eggs (BEATEN)1/3 cup low fat buttermilk1 tsp baking soda1 tsp vanillaIcing:1 stick light parkay margarine6 TBsp Coke Zero3 TBsp cocoa powder2 1/2 cups powder sugar1 tsp vanilla2 1/2 cups
Directions
Preheat oven to 350 degrees.

Spray & lightly flour a 13 x 9 cake pan.

Put flour & sugar in a large mixing bowl.

Melt 2 sticks of light parkay margarine with 1 cup coke zero and 3 TBsp of cocoa powder. Bring to a boil. Slightly cool.

Mix baking soda with buttermilk. Beat the eggs.

Pour chocolate mixture into flour mixture. Beat with mixer. Add buttermilk, eggs and vanilla. Beat well. Add mini marshmallows. Batter will be thin. Pour into prepared cake pan. Bake for 30-40 minutes. Check after 30 minutes.

Icing:

Melt 1 stick light margarine with 6 TBsp coke zero and 3 TBsp of cocoa. Bring to a boil. Remove from heat. Mix in powder sugar and vanilla until smooth. Icing will be thin.

Pour over warm cake with holes poked throughout to have the icing to seep through the cake. There will be a thin layer of icing on top.

Makes 24 @ 2 inch servings. About 200 calories and 6 grams of fat per serving.
