Healthier Chocolate Bundt Cake

Ingredients
1 cup sugar1 cup Splenda1/3 cup cocoa powder1 cup white all purpose flour1 cup whole wheat flour2 tsp. baking sodadash of salt1 cup olive oil4 tbls. buttermilk powder w/ 1 cup water2 eggs1 cup boiling water1 tsp. vanilla
Directions
Beat first 8 ingredients to mix. Add the boiling water and the vanilla and beat 1 minute. Pour into a bundt pan sprayed with non-stick cooking spray. Bake at 350 degrees for 35-40 minutes. LEAVE IN PAN AT LEAST 30 MINUTES!

    This was very good. It did have that hint of splenda, so if you like that you're fine. I cooked it at between 325 and 350 for only 30 minutes and I wouldn't have cooked it for any longer. I did use a chocolate glaze :) - 4/18/08
