Turkey Curry

1 onion, raw, diced2 lbs of lean ground turkeyYellow curry powderRed Curry PasteDusting over the top of cilantroSame with basilHalf a package of spinach1/3 cup of whole wheat couscous1 tbsp of sesame oilA couple spoonfuls of minced garlic
Start by chopping up the onion, this is the majority of the prep work.
Have the heat on the burner near high
A wok or large skillet is recommended!
- add the sesame oil, garlic and onions
- stir until onions begin to soften
- slowly stir in the ground turkey bit by bit
- when it is evenly dispersed throughout the pan, sprinkle the yellow curry powder over the top until it covers the surface area of the dish
- stir ingredients together then add the red curry paste,
**Note: The red curry paste is what's going to give this recipe some kick, which I quite enjoy but you may leave this out and it will still be quite tasty, just not spicy.
- Like you did with the yellow curry powder earlier, dust on your helping of cilantro and stir it on in there, followed by the basil.
- Add couscous in and stir together so that it mixes well with ingredients. Add 1/3 cup of water to help the couscous really stick to the turkey.
- Lastly add the spinach and stir it into the mixture, cover it and let it simmer for about 10 minutes longer on half heat and enjoy! A tasty dish that is one of my favorites and is fortified with an abundance of vitamins and minerals! I urge you to try this because you will not only have a healthy meal, but will surely have leftovers to pack into a sandwich or have on its own for days to come!
