Annie B's Amazing Tostadas

Peruvian beans, home cooked w/garlic, onion, salt, olive oil (or 1 can vegetarian refried beans)Tostada shellsRomaine lettuce, shreddedCojack cheese, shreddedBlack olives, slicedPico de gallo (tomatoes, cilantro, white onions)Guacamole (avocadoes, lime juice, cilantro, salsa)Sour cream (optional - Daisy)
Cook 2 c. raw Peruvian beans (find at any Latin market) with 1 whole white onion, 2 cloves garlic, and enough water to cover. Bring to a boil, then cover and simmer until beans are soft (2-4 hours). Add 1 t. salt and 2 T olive oil and cook at medium high heat until water boils off and left with soft, moist beans. Mash with a potato masher. Prepare pico de gallo and guacamole. Chop and shred fresh ingredients. Layer ingredients on tostada shell. Heaven...
