* Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb (remove) * Olive Oil, 2 tbsp (remove) * Onions, raw, 1 small (remove) * Parsley, 1 tbsp (remove) * *Ketchup, Heinz, 0.5 tbsp (remove) * Tomato Sauce, 2 cup (remove)
Put olive oil in a pan and heat it. Add onions and stir for few minutes. Then add eggplant cut in pieces and stir. Then add tomato sauce and ketchup, salt and leave it simmer for about 10 -15 minutes. At the end add parsley chopped. Salt as desired.
