Ripe Tomatoes Gratin (Wal-Mart Recipe)

Ingredients
4 plum tomatoes1 garlic clove, finely minced1 TB balsamic vinegar2 TB extra virgin olive oil, divided1/3 c. breadcrumbs1 TB parsley1 TB basil1 TB thyme
Directions
1. Preheat oven to 400 degrees. Cut tomatoes in half lengthwise. Arrange tomatoes, cut side up ina baking pan. Sprinkle with garlic, and season with salt and pepper to taste. Drizzle with vinegar and 1 TB olive oil. Bake uncovered for 20-25 minutes or until softened. Remove from oven.

2. Preheat broiler. In a small bowl, stir together breadcrumbs, parsley, basil and thyme. Sprinkle over tomatoes. Drizzle with remaining 1 TB of oilive oil. Broil 4-5 inches from the heat 2 to 3 minutes or until golden brown.
