Tailgate Chicken Teriyaki

6 boneless, skinless chicken breasts (4-6 ounces each)2/3 cup low sodium soy sauce1/4 cup mirim (rice wine)1/4 cup rice vinegar1/4 cup Splenda1 Tbsp. freshly grated ginger2/3 cup beer
For marinade, combine soy sauce, rice wine, vinegar, Splenda, ginger and beer in small saucepan. Cook over high heat until it reduces by half. Let cool.
Put chicken breasts and marinade in plastic bag and seal tight. Place bag in cooler with ice pcks and let marinade on the way to the game!
When you get to the parking lot, preheat your grill. Grill the chicken on each side until they are cooked through, 4-6 minutes per side.
