Mexican Veggie Rice

Ingredients
Soup, chicken broth, canned, less/reduced sodium, 1 canBeans, black, 1 canBeans, white, 1 can*Brown Rice, medium grain, 8 cup Eggplant, fresh, 2 cup, cubes *Tomato products, Hunts Diced Tomatoes w/ Chipoltes, 1 can*Bison Light Sour Cream, 8 tbsp Garlic, 1 tsp Jalapeno Peppers, .5 cup, sliced
Directions
*Simmer chicken broth, garlic and cubed eggplant for a few minutes
*Add canned beans (make sure you drain really well before adding), jalapenos and diced tomatos...allow to simmer for 15-20 min
*Prepare brown rice
*Pour veggies over rice and add sour cream
*Enjoy!
