Asian Peanut Noodle Salad

1 package of soba noodles3-4 tbsp organic unsalted peanut butter1/2 bag broccoli coleslaw mix1/2 can of coconut milk1.5-2 tbsp chili garlic sauce1/2 cup bean sprouts1 tbsp sesame oil1/4 cup sesame seeds3 stalks lemon grass2 tbsp lite soy sauce1 lime4-5 pieces of fresh ginger1 cup of scallions chopped1-2 tsp rice vinegar
prepare soba noodles according to directions on package.
put coconut milk, ginger, and lemon grass in a pot on stove and heat on medium low for 20 minutes
mix peanut butter, chili garlic sauce, sesame oil, soy sauce,rice vinegar, and lime juice together in a bowl.
remove lemon grass and ginger from the coconut milk and pour half of the milk into the peanut butter mixture.
mix together well. depending on the consistency you would like you may want to add more milk. it should not be too runny.
taste to see if sugar is needed. if so, add sugar.
pour this mixture over soba noodles.
add broccoli slaw and bean sprouts and gently fold until well incorporated.
top with sesame seeds and scallions.
you can also add cilantro if you like it.
