Candied Yucca

Ingredients
2 cups of yucca1/4 cup of brown sugar, packed1/4 cup of margarine1 Tablespoon of Cornstarch2 Tablespoons of water
Directions
Peel and cut Yucca in 1 inch rounds. Place in pot of water and boil for approx. 20 minutes.

In the meantime melt 1/4 cup of Margarine in a frying pan over med. heat.

In a small bowl mix brown sugar and cornstarch together. Add water and continue to stir. Add to the pan of margarine. Turn heat to low.

When Yucca is tender drain pot.
Add Yucca to the pan of margarine and turn heat up to med-low allowing to simmer. Turn occassionally until the sauce is thick and adherering to the Yucca approximately 7-10 minutes.

Makes 4 -1/2 cup servings.
