Blueberry-Lemon Cookies

Ingredients
1 stick unsalted butter1/3 c. sugar1 large egg yolkfinely grated zest of one lemon1 1/2 c. flour1/2 t. baking powderpinch of salt1/3 c. dried blueberries1 egg white, lightly beatensugar for sprinkling
Directions
Beat butter, sugar and egg yolk until light and creamy.
Beat in lemon zest.
Add flour, baking powder, salt and blueberries.
Mix with large spoon and bring dough together with your hands.
Wrap and chill about half an hour.
Roll dough out on floured service to 1/4 inch thick.
Cut rounds with (fluted) cookie cutter.
Bake at 400F about 10 minutes.
Lightly brush each cookie with egg white.
Sprinkle with sugar.
Return to oven 4-5 minutes until golden.
Enjoy!

Option: stack 5-6 cookies on a plastic wrap square and tie with a ribbon for a gift.
