Redcurrant Duck

2 large skinless duck breasts (approx. 10oz each)25g butter6 tbsp (90ml) port1 tbsp redcurrant jelly
1. Saute the duck breasts in the butter for about 10 - 15 minutes, until they're cooked to your liking.
2. Remove them from the pan and keep warm.
3. Add the port and redcurrant jelly to the pan and cook. Stir until the redcurrant jelly dissolves.
4. Boil rapidly until reduced by half.
5. Cut the duck breasts into diagonal slices. Serve with the sauce spooned on top.
