4 large B.S. Chicken Breasts, shredded4 cups 99% fat free Chicken broth6 cups water1 Cup Long Grain Brown Rice1 Cup chopped celery1/2 Cup chopped onion1 Cup frozen, or fresh green beans, snapped2 Cups frozen black eyed peas1 Cup, Large frozen Lima Beans1T cumin, ground1 Garlic glove or 1 tsp garlic powder1 Dash of salt1 Dash of black pepper1 Dash of red pepper
Stew chicken breasts in water. Shred when done.
Add chicken, rice, beans, celery, onion and spices to water and chicken broth. Can use all chicken broth if you prefer. Bring to boil. Cover. Reduce heat. Simmer for 1 hour or more. Makes a large pot of hearty soup. Gets better the longer it sits! Great for quick meals during a busy week.
