Low Fat Tiramisu

Ingredients
2 medium eggs16 ounces fat-free cream cheese75g (2/3 cup) caster (raw) sugar1 tsp vanilla essence (vanilla extract)6 tbsp coffee flavoured liqueur200ml (7 fl oz) strong black coffee24 ladyfingers (sponge fingers)1 level tbsp cocoa powder
Directions
1. Separate the eggs. Place the cream cheese in a bowl with the egg yolks, caster sugar and vanilla essence. Whip until smooth. Whisk the egg whites and fold into the mixture. Spoon a third of the mixture into the base of a 900ml/2pt rectangular dish.

2. Mix together the liqueur and coffee. Dip half the sponge fingers into the liquid and place in the dish. Spread another third of the mixture over the sponge fingers and then dip the remaining biscuits and lay over the creamy mixture. Finish with a layer of creamy mixture and dust with the cocoa powder.

3. Chill the dish overnight before serving.

    How fine is castor sugar? is it as fine as powdered? or between regular and powdered? I think if it is between regular and powdered, I would just put regular sugar in a blender and pulse for a few seconds. Oh - now I see the website for making your own!! - 1/19/15
