Flax Carrot Apple Muffins

Ingredients
1 1/2 cups Whole Whear Flour3/4 cup flaxseed meal 3/4 cup instant oats1 cup brown sugar2 tsp baking soda1 tsp baking powder1/2 tsp salt2tsp cinnamon1 1/2 cups finely shredded carrots2 peeled and shredded apples1/2 cup raisins1 cup chopped walnuts3/4 cup skim milk2 beaten eggs1 tsp vanilla
Directions
Mix together dry ingredients, then stir in carrots, apples, raisins and nuts. Combine milk, beaten egg and vanilla. Pour wet ingredients into dry and mix until moistened.

Bake at 350 degrees for 15-20 mins

Yield: 24 muffins
