White Chicken Chili

6 cups chicken broth (I use low-fat, low-sodium)2 cans white beans, drained4 cups chicken breast cooked and chopped1/2 cup chopped onion2 cloves minced garlic2 cans green chiles (I use 4.5 oz cans chopped)1 Tbsp. dried oregano1 Tbsp ground cumin1/2 tsp cayenne1/2 tsp pepper1 cup shredded cheese for garnish (optional)
Simmer the chicken in water to precook it. Discard the water and chop the chicken into bite-sized pieces.
Bring the 6 cups of broth to a simmer, add the chopped chicken, the drained beans and all other ingredients except the cheese.
Simmer for 30 minutes to an hour.
Add a couple of tablespoons of cheese to each bowl when serving. It is good with or without the cheese.
