2 large baking potatoes1 medium sweet onion3 tbsp extra virgin olive oilParsley flakesSaltPepper
Preheat oven to 450 degrees. Spray cooking spray onto a baking dish. Chop onion and potatoes into bite size pieces and mix them together in the dish. Drizzle olive oil over the vegetables. Add parsley flakes, salt and pepper to taste. Stir. Bake in oven for 60 minutes at 450 degrees. Makes 4 servings.
