Chicken Potpie

Ingredients
1 can 98% fat free condensed cream of mushroom soup5 oz. fat free evaporated milk1 Tbsp. dried parsley flakes1/2 tsp. dried thyme3 Cups cubed chicken (or turkey)1 10 oz. pkg frozen mixed vegetables, thawed1/4 tsp. salt1/4 tsp. pepperCRUST:3/4 cup instant mashed potato flakes3/4 cup all-purpose flour1/4 cup grated parmesan cheese4 tbsp. light margarine1/4 cup ice water
Directions
Mix together all of the ingredients for the bottom of the pot pie and pour into a greased 11X7 baking dish. For crust combine flakes, flour and parmesan; cut margarine into it until crumbly. Add water until dough forms a ball. On a lightly floured surface, roll the dough to fit baking dish. Cut vents in crust. Bake at 400 degrees for 25-30 minutes. This makes 6 servings.
