4.5 oz xtra firm tofu, drained2 med potatoes (425 g)1/4 large red onion, chopped1/4 red bell pepper, chopped1 1/2 c mushrooms, sliced1 T soy saucegarlic powder and pepper to taste
Wash and cube potatoes. Heat large frying pan on medium heat and spray with non-stick spray. Cook potatoes approximately 8 minutes or until tender, stirring occassionally. Add veggies and crumble tofu into pan. Cook until onion is transparent and mushrooms are browned. Add soy sauce, garlic powder and pepper (if desired). Serve on warm tortilla with choice of toppings (I love it topped with some guacamole!)
