2 c. long grain brown basmati rice1 medium onion, finely chopped2 T Butter (or ghee)2 T Olive Oil1 t cumin seeds1 t fenugreek seeds2 t tumeric4 cardamom pods2 bay leaves1 t sea salt4 c chicken stock
In heavy flameprool casserole, melt butter and olive oil. Open cardamom pods and add seeds to casserole along with onion, cumin and turmeric. Saute until onion is soft. Add rice and saute, stirring, until rice turns milky. Pour in broth, salt & bay leaves and bring to a full rolling boil. Boil, uncovered, for about 10-15 minutes. Reduce heat, cover tightly and cook for at least 1 hour or for as long as 3 hours. Do not remove lid during cooking.
