Simple Greek Salad

Ingredients
1 medium cucumber, peeled and diced small1/4 of a medium green pepper, diced small3 Tbsp red onion, diced small2 plum tomatoes, diced small3 Tbsp black olives, diced3 oz of feta cheese, crumbleddash of saltblack pepper to taste
Directions
Dice up all ingredients and toss in bowl with a dash of salt (salt can be omitted, but it help get some of the water out of the vegetables). Mix in feta and add pepper to taste. Let sit in fridge for about 30 min prior to serving. Mix and serve. Makes about 6 servings.
