Low Fat Sour Cream and Garlic Potatoes

Ingredients
4-5 large potatoes (I prefer red potatoes)1 clove garlic3 T fat free sour cream1/4 C nonfat milk2 t dried parsleysalt pepper
Directions
Dice potatoes, I leave skins on. Peel garlic and quarter. Add potatoes, garlic and some salt to a pot and fill with enough water to cover potatoes. Boil until soft.

Drain potatoes, put back in pot and add remaining ingredients. Smash up to desired consistency. I prefer mine a little lumpy.

Makes about 6 1/2-cup servings.
