1/2 medium yellow onion3 or 4 chicken breast10 corn tortillas2 jars of green mexican salsa
Boil chicken breasts and coarsly chopped onion until chicken is cooked (15-20 minutes). Shred chicken with fingers, and chop cooked onions. Mix together. Put tortillas in microwave for about 1 min to soften. fill tortillas with chicken/onion mixture and place in a 9x12 pan. Once all 10 enchiladas are rolled, cover with green mexican salsa. Cook on 325 for about 30 minutes, then enjoy with shredded lettuce, sour cream, or mexican cheese.
