Curried Tilapia

Ingredients
1 tablespoon sunflower oil1 Onion, chopped1 cup tomatoes peeled and chopped1 tablespoon curry powder (strength of your preference)16 oz Tilapia (skinned and deboned)1 tsp Brown sugarSalt, Pepper to tasteJuice of one lemon
Directions
Heat oil in heavy based saucepan large enough to hold the fish flat. Fry the onions in the oil until translucent (not brown). Add the curry powder and fry for a further minute or 2 (careful not to burn the spices). Add the tomatoes and turn the heat to medium. As the tomatoes start making sauce, add the fish and a little fish stock or water to cover. Cover and simmer for about 15 minutes or until the fish is cooked through. Stir through the seasoning, sugar and lemon juice. Serve with brown rice.
