Zucchini Frittata

Ingredients

Egg substitute, liquid (Egg Beaters), 1 cup Zucchini, 2 cup, sliced Olivio, Olivio Buttery Spread, 5 sprays, 1 serving or spray of your choiceOnions, raw, .5 cup, sliced Salt, 1 tsp or to tastePepper, black, 1 tsp or to tasteParmesan Cheese, grated, 4 tbsp
Preheat Broiler
Wash and cut zucchini in 1-2 inch rounds
Clean and slice onions (thickness or your desire, I prefere mine thin)
Spray Cast Iron pan or other oven safe pan and heat. When pan is hot put in zucchini and onions to sautee. I prefer my zucchini a bit on the "al dente" side but you can cook them to your preference. Add salt and pepper. Add the egg substitute and cook on burner until the egg begins to firm up. Spread grated cheese on top and place in boiler until egg is fully cooked and top is browned.
Cut in half and serve
