Chicken Tostada

5 chicken breast, baked and cubed24 Corn Tortillas4 Small Green Peppers, chopped (or various colors for variety)2 small onions, diced2 cups reduced fat Mexican or Cheddar cheese, shredded
- Bake and cut chicken into bite side pieces
- Chop peppers and onions, cook in fry pan until desired crispness - use cooking spray to avoid sticking
- Broil corn tortillas on High 4 minutes, turning halfway. WATCH carefully as they will burn easily!
- Mix chicken, peppers, onions in fry pan. Add any Mexican seasoning that you prefer (I add some seasoning to the chicken before baking)
- Top each crispy tortilla with chicken/pepper mix
- Sprinkle tops with cheese
- Bake in 350 degree oven until melted (approx 5 mins)
Can be served with a dollop of fat free sour cream and fresh veggie on the side (not included in nutritional information)
Makes 24 servings of 1 tostada each.
