chicken and summer squash

2 skinless chicken breasts1/4 tsp salt1/8 tsp pepper1/4 C chopped onion2 cloves chopped garlic1 large yellow squash1 large zucchini1/2 medium tomato - peeled, seeded and chopped

spray large skillet with cooking spray over medium high heat. season chicken with half of salt and pepper and add to skillet. cook until lightly brown about 2 minutes per side. transfer to plate and keep warm.
pour off any fat. add squash and zicchini, tomato, garlic and onion and season with remaining salt and pepper. over mediium high heat cook for about 3 minutes. reduce heat and return chicken to skillet. cover partially. cook until squash is soft and chicken is white throughout but still juicy about 5 minutes longer.
again tranfer chicken to plate and cover with foil to keep warm. raise heat to high. cook vegs stirring often until most liquid is cooked off about 2 mintues. serve
