Ingredients
Directions
1 can green beans, cut 1 can new potatoes, diced 1 can sweet corn1 can peas and carrots1 can 98% fat free cream of chicken soup1 pound 99% fat free all white meat turkey breast1 can fat free, low sodium chicken broth1 box whole wheat chicken stuffing
Open all cans of vegetables and drain. Set aside.
Cut turkey breast into 1-inch pieces. Combine all vegetables, soup and turkey in crock pot. Stir all ingredients together well. Cook on high for approximately 3 to 3 1/2 hour until turkey is done. Feel free to stir occasionally. If mixture appears to be drying out, add some chicken broth sparingly as too much moisture will change the consistency of the meal.
When turkey is done, add 1/2 cup broth to crock pot and add stuffing mix. Mix well. If stuffing is too dry, add more broth but you shouldn't need more than 1/2 the can.
Return cover and cook for 10 to 15 more minutes.
Makes 6 1 cup servings.
