Coconut Curry Chicken

2 chicken breasts, cubed4 tbsp canola oil, dividedlarge red pepper, cut into strips1/2 green pepper, cut into strips1 med onion, sliced3/4 cup sliced mushrooms3 garlic cloves, minced1/2 lb frozen green beans. thawed2 tbsp curry powdersalt and pepper to taste1 can coconut milk
Saute chicken and garlic in 2 tbsp oil until browned. Remove to a plate. Add remaining 2 tbsp oil to pan. Saute onion, peppers and mushrooms for 2 or 3 minutes. Add green beans and continue cooking. Season with salt and pepper and curry powder. Return chicken to pan and add coconut milk. Heat through and serve over rice.

Thanks for your comment. Any veges will do. Add some red pepper flakes if you like hot. :)
