TVP in Tomato Sauce

Ingredients
1 cup TVP chunks (plain or chicken flavour)1 cup low sodium vegetable broth1 tbsp olive oil1 medium onion, chopped1 clove garlic, diced8oz low sodium tomato sauce1/2 cup diced tomatoes1 tbsp fresh chopped oregano or 1 tsp dried oregano
Directions
1. Rehydrate TVP by pouring 1 cup boiling broth over it and letting it stand for 5-10 minutes
2. Heat the oil in a large skillet on medium-high heat
3. Add onion & garlic, sauté 3 minutes or until tender.
4. Add TVP and tomato sauce to pan, sauté 5 minutes
5. Add diced tomatoes and oregano
6. Cover, reduce heat and simmer 10 minutes

    This sounds healthy and hearty, and it's a great way to get some tomatoes into the diet of someone who doesn't like plain tomatoes (such as my kids!) - 3/20/07
