South Beach Chicken Divan

Ingredients
4 boneless skinless chicken breast1c Miracle Whip fat free 8oz fat free sour cream1 tsp curry powder1/4c Campbell's low sodium chicken broth1 large (10oz) park frozen broccoli1c low fat shredded cheddar cheese
Directions
Preheat oven to 350
In a large pot, boil the chicken until mostly cooked (approx 15-20mins). While the chicken is boilbing, boil the broccoli in water for approx 10 ins (this will make the broccoli more mushy in the casserole dish which makes it taste better to me?) Drain the broccoli in a strainer. Mix the mayo, sour cream, curry powder, chicken broth and cheese in a med size bowl. in a 9x13inch glass casserole dish, layer the broccoli, then the chicken on top. Pour the cheese mixture over the top. You can add a little more cheese if you like to the top.
Bake for 30mins.

    My husband and I liked this. Nice creamy sauce. My son who is a very pickey eater ate only the chicken. I love broccoli however, they dont so I substituted a package of frozen green beens, and a can of corn. Did not do out the calorie count. I would make it again. YUM. - 2/12/11
