Ingredients
1 lb. Wagon Wheel Pasta2 cans great north beans1 can diced tomatoes1 can red enchilada sauce1 teaspoon chili powder1/2 teaspoon cumin1 cup shredded cheddar cheese
Directions
cook pasta according to package directions. Combine remaining ingredients (except cheese) in a large skillet, heat for 6 minutes while stirring. Toss pasta and sauce mixture together. Top with cheese.

    I did this same recipe but I added soy crumbles to it. It tastes great, has a moderate kick to it and my husband loved it! Its just to two of us so I packed up the rest and we had enough for lunches and a left overs night! I will be keeping this in my recipe box to make again! - 4/23/09
