Shrimp Scampi

Ingredients
2 LBS. Peeled and deveined large shrimp1 C. Butter, melted1/4 C. Olive Oil3 TBS Lemon Juice2 TBS Basil1 TSP Garlic, minced1 TSP Oregano, crushed3/4 TSP Salt1/4 TSP Pepper
Directions
One: Preheat oven to 450F.

Two: Cut each shrimp lengthwise along the underside, being careful not to cut all the way through. Spread shrimp open, butterfly fashion, in a broiler-proof 13x9x2-inch baking dish.

Three: Combine melted butter and olive oil, stir in lemon juice, basil, garlic, oregano, salt, and pepper. Pour over shrimp.

Four: Bake, uncovered 8 minutes. Turn ovent to broil. Broil shrimp about 3 minutes or until shrimp are opaque and mixture is sizzling.

Freeze: Prepare through step three. Cover with plastic wrap and foil. Freezer up to 2 weeks. Defrost completely in refrigerator. Preheat oven. Remove plastic wrap and foil and continue according to step four.
