Tomato Leek Soup

Ingredients
2 large potatoes3 leaks1 med onion1 Tbsp Olive Oil1 48oz can stewed tomatoes6 cups chicken broth1/4 milk3 Tbsp Cornstarch250ml Light Sour CreamS&P
Directions
Saute the potato, leaks & onion in the olive oil. Add can of tomatoes & chicken broth. Simmer until vegetables are cooked, approx 15min.
Puree in blender. Thicken with milk & cornstarch and then add sour cream.
