Meatloaf with Basil-Garlic Diced Tomato Topping

3 pounds Ground Beef, Pork and Veal1 large onion, chopped1 cup Fiber One Cereal, crushed1 package Lipton Onion Soup Mix1 cup Liquid Egg Whites1 15 oz can Tomato Sauce1 14.5 oz can Del Monte Diced Tomatoes, with Basil Garlic & Oregano, NO SALT ADDED
Mix meat, onion, cereal, soup mix, and egg whites together.
Spray (2) loaf pans with cooking spray. Evenly divide mixture in half and place this half into a pan. Then, place the remaining mixture half into the other pan.
In separate bowl, mix tomato sauce with diced tomatoes. Top the meatloaf with this mixture.
Bake at 400 degrees for 30 minutes.
Makes about 14 servings (7 slices from each pan)
